1. Preheat
During the drying process, if the jujube fruit directly enters a high temperature environment suitable for sugar conversion, the huge temperature difference will cause the jujube to undergo a biological protection reaction, the pores of the epidermal cells will shrink, the crust will harden, and the water inside the jujube will be prevented from evaporating. Therefore, in the early stage of drying red dates, it is necessary to fully preheat and gradually heat up to prepare for a large amount of water evaporation. Keep it at 35℃ for 6-10 hours. When the temperature of the jujube reaches 45℃, it will feel a little hot. After 7-8 hours, when the jujube is pressed hard, wrinkles will appear on the body of the jujube; when the temperature of the jujube reaches 45-48℃, the surface of the jujube will become A layer of small water droplets appeared.
2. Evaporation
The free water in the jujube is evaporated in large quantities. At this time, the temperature must be increased, and the drying room should reach 65 °C within 8 to 12 hours, and should not exceed 70 °C. In order to facilitate the evaporation of a large amount of water, pay attention to dehumidification, and keep the indoor temperature from changing greatly, so as to continuously evaporate the water. When there are wrinkles on the surface of the jujube fruit, it means that the drying is normal
3. Drying
When the temperature in the jujube is uniform, this stage of work can be completed within 6 hours. Because there is not much water in the jujube in the later stage, special attention should be paid to temperature control, and it should not be too large, preferably 50 °C. At this time, the relative humidity has also dropped, and if it is higher than 60%, it can be slightly dehumidified. As the moisture in the jujube gradually balances, the purpose of drying is achieved. Pay attention to unload the dried samples in time.
4. Cool down
Baked jujube must pay attention to ventilation and heat dissipation, and can be stacked after cooling. If the red dates that have just been unloaded from the drying room are stacked in the warehouse, because the red dates themselves contain a lot of sugar, under the action of heat, the sugar is easily fermented and deteriorated, and the original pectin in the dates will also be decomposed into pectin and pectic acid. It will inevitably make the jujube a mess, and it will also change the sugar in the jujube, resulting in the appearance of sour filaments, which will destroy the red jujube. Therefore, after baking, it must be completely cooled before it can be stored.
