1. Raw material treatment: The harvested plums, such as Sanhua plum or Quanhuang plum, are first subjected to "peeling" treatment to remove the waxy layer on the surface of the peel, so that the sugar can easily penetrate into the inside of the pulp.
2. Hardening and color protection: There is a tannin substance in the plum pulp. During the processing, due to the oxidation of the tannin substance, the product appears gray-brown and affects the appearance. Therefore, it is necessary to prepare a mixture of hardening and color protection; 0.1% dichloride The raw materials were soaked in a mixture of calcium chloride and 0.1% sodium bisulfite for 8 hours, then washed with clean water, drained and set aside for later use
3. Preparation of sugar solution: 50 kg of fresh fruit needs to be made into 40% sugar solution with 25-30 kg of white sugar; 0.1% citric acid is added to the sugar solution; 0.05% potassium sorbate is boiled and then the raw materials are added for dipping.
4. Sugar penetration process: The concentration of the sugar solution drops greatly on the second day when the plums are immersed in the sugar solution. Generally, the concentration is only about 20%. It is necessary to concentrate the sugar solution, extract the thin sugar solution, and heat and concentrate it in a jacketed pot or stainless steel pot. It is required to increase the concentration by about 5%. Add the concentrated sugar solution to the plums while it is still hot. In the future, this process should be repeated every 1-2 days, and only the sugar liquid should be boiled, and the raw materials should not be directly heated. In the process of continuous rise of sugar liquid, it is the process of continuous evaporation of water in the raw material and continuous absorption of sugar. If there is no vacuum sugar clearing equipment, the cycle is relatively long, and it generally takes 15-20 days to make the sugar liquid rise to 55-60%, and the sugar liquid concentration in the pulp also needs to reach more than 50% before the sugar clearing is completed.
Pick up the honey plums from the sugar solution, spread them flat on the material tray, and insert the material tray into the material cart.
Push the material cart into the drying room, and configure a drying room with a length of 4.8 meters, a width of 2.2 meters, and a height of 2.2 meters. The heat pump dryer can push 10 material carts at a time.
